Made by Simon Coulshaw of the minimal-intervention school. Biodynamic farming although not certified. 100% Roussanne planted on their highest vineyards, a steep north-facing slope in the foothills of the Cévennes mountains. Isolated vineyards surrounded by herbaceous shrub and woodland on schist and basalt boulders. Hand-picked at 20-25 hl/ha, Five days' on skins then 48 hours of cold settling before racking. Spontaneous fermentation, no enzymes, no fining, minimal sulphur and sulphites. Carbon dioxide nap used to avoid oxidation.

Beautifully clear with green reflections. Intense nose of apricot, vine peach and rose. Very aromatic and floral. Powerful and generous on the palate with a remarkable finish, persistent, fresh and fruity. The soil, composed of chalky ‘terres blanches’, is ideal for the Viognier grape. Control of yields via optimal management of nutrition and de-budding. It spends 4 months in stainless steel vats. Batonnage on the lees to accentuate the plumpness on the palate.

Domaine des Soulanes
A very special wine from ancient plants of two of the rarest and very best vines for Soualnes terroir, Grenache Gris and Carignan Gris. This really does have everything. It's floral, honeyed orchard and citrus fruits added to its sumptuousness, its layers of texture and bright but not too spiky acidity. Very long with great balance and so much interest. Divine stuff that is here in tiny quantities.

Xavier Gerard's baby Condrieu made from Viognier from Vérin, above Condrieu. 80% steel vat, 20% 300-litre & 600-litre oak cask fermented at 15°C, raised 6-8 months away from its lees in 22 hl large barrel & steel vat, malo usually blocked, first wine 2006 (600-litre cask, the oaked part of it, malo not completed) yellow colour; pear, apricot feature in a bouquet that is nicely funnelled. There’s a good run of spiced fruits along the palate. That carries a nice bit of weight, nice detail.

A blend of Chardonnay, Chenin Blanc and Mauzac. Traditional method. Exclusively hand-picked with immediate pneumatic pressing. Initial fermentation takes place in thermo-regulated stainless steel vats. After assemblage a second fermentaion takes place in bottle. The wines are 'forgotten' in the cellars for 5 years. Then this Grande Cuvée is finally revealed - showing incredible freshness and great delicacy. The wine is dosed at only 5g/l. Coming in at 12% alc. The wine is rich and complex with a beautiful golden colour with fine and very delicate bubbles. Rich caramel tones interwoven with crystalised fruit with fine vanilla and a whiff of gingerbread on the nose. The palate is delightfully youthful with accompanying citrus notes with orange oil and zest. A remarkable and truly special Cremant de Limoux. A special sparkling wine.

Gentle lees stirring for the first four months. Unfined. Château Rive-Blanques now belongs to Pierre Bories’ Artisans & Partisans group of estates. "Rich, nutty (even a little caramelised) and streaked with fresh garrigue. As with their Dédicace Chenin, the acidity feels softer and more muted than I’ve come to expect with R-B wines, but there is a firm hazelnut and walnut framework around the fruit, so the texture and structure is there. Touch of liquorice on the finish gives it a nice twist". 16.5/20

Viognier (1984-85) from 1.1 hectare on Côte Châtillon at Condrieu, raised 50-60% 22 hl large oak barrel and 40-50% steel vat, malo completed. "fine yellow robe; the nose is very elegant, composed of peach, aniseed, white plum, has an excellent floating style, grace. This is top tack! It has much suavity of texture, with very assured persistence, is refined and gliding throughout. It’s real good Châtillon, bang on the money as it should be. The elegant crisp finish makes this a fantastic wine for all occasions. The fruit for Aloe Tree hails from the increasingly fashionable west coast of the Cape. Cool nights and sea breezes combine to extend the growing season, resulting in perfectly balanced, ripe grapes. The iconic Aloe Tree image is sure to be familiar to anyone who has travelled widely through the Cape and is an important part of the biodiversity which South Africa is famous for. The characteristic silhouette provides a backdrop to one of the most spectacular wine regions in the world where wines grow in harmony with the thousands of plant species that make up the Cape Floral Kingdom. Chenin blanc is well adapted for various soil types, but our premium grapes are grown on medium to lower potential soils. Yield levels are limited by winter pruning and by removing shoots and leaving two or three shoots per spur during early spring. Canopy management is required as it plays a major role in yield and quality to ensure an optimum microclimate within the canopy. With its vigorous growth, medium-sized trellises are required and shoot positioning are done to maximize canopy surface. Grapes are harvested at a minimum of 21.5°Brix, but we aim for 22°Brix. Once the Chenin Blanc grapes are harvested, they arrive at the winery where the fruit is gently pressed and only the free run juice is used. Using selected yeasts the juice then undergoes cold fermentation at 14 degrees Celsius for 2 weeks before lying on the lees for 3 months.

Mas Sibert
Alvino is made from a curious mix of Albarino, Petite Arvine, Viognier. After a short maceration on skins, the wines is aged in amphoras for 6 months. Quite a rich, round wine, but with nice acidity on the long attractive finish.
